My journey to opening this plant-based kitchen was a unique one, rooted in a deep passion for animals and a love for good food.
I originally studied Veterinary Medicine in Italy, where I focused on neurosurgery for pets. As my career evolved, I felt compelled to use my skills to help those most in need, leading me years later to train as a Veterinary Inspector at one of the largest slaughterhouses in Europe. That experience was a turning point for me. Witnessing the reality of the meat industry firsthand made me realize that I didn't want to be part of a system based on violence and abuse, not only against animals but humans too. I wanted instead to create without causing harm and contributing to a world where animals are not used as ingredients.
At the same time, Italy’s economic situation was becoming increasingly difficult. This prompted me to seek new opportunities, and I moved to the UK—a decision that gave me the perfect chance for a fresh start and to pursue my true passion: cooking. I began working in Michelin-starred kitchens between the UK and Copenhagen, where I gained invaluable knowledge of culinary techniques and how to craft dishes at the standard I was looking for.
However, I also encountered aspects of the industry that didn't sit right with me. Being bullied for being most of the time the only woman in the kitchen, a predominantly male environment, struggling with language barriers when I first arrived in the UK, the enormous waste, and the focus on impressing guests with extravagant ingredients rather than considering the nutritional value or the environmental impact of each dish.
Despite these challenges, I became increasingly disillusioned with the industry. This realization, combined with my ethical commitment to not using animal products, fueled my desire to create something different.
Along the way, I became mother of two beautiful boys, Oscar and Francesco, and chose to dedicate those early years to being a full-time mom for them, cherishing the precious early years with them.
As they began preschool and I found a bit of time for myself again, I knew it was the perfect moment to revisit my dream.
Outside of my culinary adventures, I have a passion for every form of arts, from painting to music. I also love practicing MMA, a sport I've dedicated years to, and I'm always up for adventurous travel, seeking new experiences and inspiration wherever I go.
And above all, I cherish spending time with my boys, who inspire me every day.
